Swedish meatballs are one of the best-known Swedish cooking specialties. However, there are so many recipes. Almost all meatball recipes call for some type of extender such as mashed potatoes, rolled oats or breadcrumbs. Less expensive items than meat.

My mother ground very well trimmed meat (ab. 300-400 g) in a hand turned meat grinder. She even used to make her own breadcrumbs. She took 4 crisprolls and crushed them with a bottle between two layers of paper. Then the crumbs were soaked in 1 coffeecup of milk for a while to make a crumb paste. Salt, pepper, grated onion and 1 egg yolk were the other ingredients.

The Phenix City Story is a movie about a small town in Alabama. It’s ruined down by a gang of crocks that run drugs, gambling and prostituting. The lone solider come home to his small town and see his town in dark eyes. He decided to make his father run for prosecutor. Things turn to the worse before its get better and have a Hollywood ending.

With John McIntire, Richard Kiley, Otto Hulett and many more. The movie is from 14 August 1955 and directed by Phil Karlson

A simple, straight-forward recipe.

INGREDIENTS:
Serves 4

* 1 large yellow onion
* 200 g fresh mushrooms
* 300 g ground meat
* 1 tablespoon butter
* 3 cloves garlic, pressed
* 2 teaspoons chinese soy
* 3 – 4 dl (300 – 400 ml) cream
* cayenne pepper
* salt

METHOD:
1. Chop the onion and slice the mushrooms thinly.
2. Melt butter in a large skillet, fry and crumble the ground meat.
3. Add onion and mushroom.
4. Lower the heat, simmer for 5 – 7 minutes, and give it a stir now and then.
5. Add garlic, and season to taste with cayenne pepper.
6. Stir in cream and soy.
7. Simmer, stirring constantly, for about 5 minutes.
8. Taste with salt.

Stay Hungry from 1976 is about a syndicate that wants to buy the land around a small fitness center. They owner does not want to sell so the syndicate send a spy to make sure they buying goes smoothly. The problem is the spy falls in love with one of the staff.

The movie was directed by Bob Rafelson and he also wrote the story. It won a Golden Glob and one other nomination. Location if Birmingham, Alabama, USA and some of the actress and actors are Jeff Bridges, Sally Field, Arnold Schwarzenegger.

Virtualization is the new black in the Mac market these days. I got a chance to talk with Pat who is the product manager of VMware for the Mac (aka Fusion). VMware is the granddaddy of virtualization, and a ‘big deal’ in that space. Pat gives us an overview of what VMware is trying to do with Fusion and a glimpse at their software philosophy.
