**Chicken Stew**

3 medium size boneless skinless chicken breast
6 medium potatoes
1 large onion
1 can of corn
1 Small can of tomato juice
Salt and Pepper

1. Boil chicken in large stew pot til tender.
2. Peel and cube potatoes, bitesize pieces.
3. Dice onion.
4. Remove chicken from pot and set to the side. Add potatoes, corn, onion and salt and pepper to the pot. Bring to a boil until potatoes are fork tender.
5. Shred chicken using two forks. ( I cheat and use a food processor). Add chicken back to pot and add tomato juice. Simmer for 30-45 mins.

Best served with crackers. Enjoy!!
